Visit to Karnataka Milk Federation(KMF): Department of Home Science
The Department of Home Science had a visit to Karnataka Milk Federation on 6th March 2024 in Kulshekar, Mangalore. Ms.Prithvi.M and Ms.Shravya.J.Pambar escorted the students. Mr.Manoj was the host who explained us in detail about the processing of milk and milk products. He also explained us about the products that are manufactured in the unit. Some of the products are skimmed milk, full fat milk, tetra pack toned milk(Tripthi), paneer, ghee, buttermilk, curd and sweets. He also took us to the packaging unit where the products were hygienically packed. We were also taken to the laboratory where the products had to undergo a quality check. The milk was initially preserved in chillers and then it was tested for it’s quality. During the quality check if they find any contamination the milk will be disposed. If all the standards are met then they will be sent for further processing. The milk had to undergo a treatment called as Pasteurization which helps to kill all the microorganisms present in it. Fat was skimmed from the milk and skimmed milk was prepared and for full fat milk they added extra cream to make it thick and creamy.
In the preparation of curd they used citric acid, which was added to milk and allowed to set and then sent for packing. The curds was available in 100ml, 250ml and 6litre jumbo packets. Panner was also prepared in huge amount were it was pressed properly and water content was drained completely and it was packed.
They also had variety of flavored milk, flavored lassi and buttermilk and variety of sweets which was manufactured and packed hygienically. He also showed us the storage tank were milk was stored and kept. Lastly he explained us about the waste management system were septic tanks were present and how the waste was treated and recycled. The waste water was recycled and reused in the garden.
On the whole the visit was informative and helped the students to gain lot of knowledge.
